Tuscan Chicken

- 1 Tbsp. extra-virgin olive oil
- 2 boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1 tsp. dried oregano
- 1–2 Tbsp. butter
- 2 cloves garlic, minced
- 3/4 cups cherry tomatoes, halved
- 1 1/2 cups baby spinach
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan
- Lemon wedges, for serving
Instructions
- Cook chicken on medium heat in olive oil. Add salt, pepper and oregano. Brown on both sides, about 4 minutes each. Remove from pan, you will simmer it to doneness later.
- In same pan add butter and cook garlic and tomatoes over medium heat. When the tomatoes split add spinach and cook until wilted.
- Stir in heavy cream and parmesan. Reduce heat to simmer and add chicken. Cook until chicken is heated to doneness.
- Serve with lemon wedges.
